Mung Bean Bread: A Healthy Alternative to Bread (during Green Week)
Are you busy with Green Week and do you sometimes miss a nice, healthy bread? This mung bean bread is the perfect solution! It is nutritious, gluten-free, and completely in line with the principles of Green Week . It is not only delicious, but also easy to make and a great alternative to bread during the detox.
What do you need?

250 g mung beans (soaked)

4 cloves of garlic

Half onion (red or yellow)

2 cm fresh ginger , peeled and chopped

4 teaspoons herb mix (oregano, rosemary, thyme)

Chili flakes (or powder) or a fresh 1/2 green pepper or jalapeno (to taste)

1 teaspoon cumin seeds (or powder)
-
Salt and pepper to taste
-
25 ml water
-
Couple of tablespoons of olive oil
-
Optional: chia seeds or linseed (for extra binding power)

2 teaspoons baking soda (or 4 teaspoons baking powder)

Juice of half a lemon

Handful of sunflower seeds and pumpkin seeds (for extra crunch)
Preparation method:

Preheat the oven : Set the oven to 180 degrees (top and bottom heat).

How to prepare mung beans : Soak the mung beans for at least 6 hours (or overnight). Then cook until soft but not mushy. Drain and set aside.

Combine the ingredients : Add the soaked mung beans, garlic, onion, ginger, spice mix, chili flakes (or fresh pepper), cumin seeds, salt and pepper, water, and olive oil to a food processor or blender. Blend everything well until it forms a smooth mixture. If the mixture is too wet, add some chia seeds or flax seeds for extra binding power, or some extra soaked mung beans to make the mixture firmer.

Add baking soda and lemon juice : Add the baking soda (or baking powder) and lemon juice to the mixture and mix well again. The dough should be nice and moist – not too wet, but not too dry either.

Add seeds : Stir a handful of sunflower seeds and a handful of pumpkin seeds into the dough for an extra bite.

Baking : Spoon the dough into a greased or lined cake tin . Sprinkle some extra seeds and kernels over it for finishing. Place the cake tin in the oven, slightly above the middle, and bake for 50 minutes at 180 degrees .

Let cool : Remove the bread from the oven and let it cool before removing it from the pan.
